THE EFFECT OF THE WETHER GENOTYPE ON THE NUTRIENT YIELD AND ENERGY VALUE OF MEAT PRODUCTS

Abstract

The article presents the results of a comparative analysis of the meat productivity and quality of meat products from wether of different genotypes. The research object consisted of purebred animals of the romanov breed (group I), as well as their first-generation crosses (½ edilbay x ½ romanov — group II) and second-generation crosses (¾ edilbay x ¼ romanov — group III) with the edilbay breed.

It was found that genotype has a significant impact on the yield of nutrients and the energy value of meat. The study determined that the dry matter content in 1 kg of edible part of the carcass varied between 319.2–354.2 g, extractable fat — 111.0–134.7 g, and protein — 198.1–209.1 g. The energy concentration in the samples ranged from 7722 to 8834 kJ.

Analysis of quality characteristics showed that the protein-to-fat ratio in the meat ranged from 1:0.56 to 1:0.64, while the meat maturity (ripeness) index was 16.30–20.86%. It was revealed that purebred romanov wether exhibited the lowest levels of nutrients, energy concentration, and product maturity. The obtained data provide a scientific basis for selecting the most promising genotype combinations for the production of biologically complete mutton.
